Week of July 26th Recap

Nothing says Summer like a nasty cold. I actually bookended my Summer with colds, how fun!

Monday - Chicken Thighs and Roasted Potatoes with Spicy Roasted Carrots

This was an Ade production because I wasn’t feeling the best. Chicken Thighs are the superior way to enjoy chicken and I stand by that! My favorite from the meal was the roasted potatoes but the spicy carrots were a nice surprise.

Wednesday - Carbonara

This was also an Ade production because I was exhausted and couldn’t stop coughing. We are trying to be healthy and are switching to whole wheat pasta, but haven’t found the perfect brand yet. We’ve been so focused on finding a good gluten free pasta we forgot the other part of healthy. This pasta was fine, it just broke a little more than we would have liked.

Friday - Al Pastor Wings by This Is Avocado (Stephanie)

These were absolutely fire. I think we are starting a new tradition of wings on Friday’s mostly because I don’t always want to chow down on wings at my desk at school. I was a little intimated gathering and using the dried chilies, but once again, making your own marinade is so worth it and easier than you think. And the pineapple garnish on top of this was just perfect. Unfortunately the weather was bad so we ended up baking these in the oven rather than grilling, but that will definitely take them up a notch next time. These wings are both smoky and spicy, so we ended up drizzling creama on them, but I think I nice zingy ranch or bleu cheese would be an excellent addition.

Sunday - Sweet and Salty Pork Chops by @flavorsbyfrangipane

Who knew the key to making enjoyable pork chops was….airfrying them?! For years I swore up and down I didn’t like pork chops because they were dry. My parents would put them in the slow cooker before leaving for church, in hopes that by 1pm they would be tender. That was not (ever) the case. So color me surprised, when a simple cook in the airfryer made these incredible pork chops. The real bonus? I got them from Costco, so I froze 2 more meals worth, and I am excited to experiment with more glazes and flavors.
