Chicken Thighs Marinated in Sweet Pineapple Sauce

Let's talk about these chicken thighs. Marinated in Sweet Pineapple Bachan Sauce until they were sticky, caramelized, and honestly a little unfair to the rest of the plate. That was the anchor for a week that also had us deep in cookbook mode, tacos on a random Tuesday, and dessert that lived up to its name (looking at you, Ooey Gooey Butter Cake).

Transparently I didn't have all of the ingredients to make this recipe true to form, but it turned out quite well! I'm excited to make it again. 

Herbed Brown Rice from The Simple Art of Rice by JJ Johnson and Chicken Thighs Marinated in Sweet Pineapple Bachan Sauce 

We tried the variety pack from Costco since we've had the original before. The pineapple is sweet, but not very pineapple flavored. It made a great meal prep dish though! 

One Pot Squash-Ta from What to Cook When You Don't Feel Like Cooking by Caroline Chambers

Kind of fun to make and toddler approved. 

Elegant Steak Salad from What Cook When You Don't Feel Like Cooking by Chambers

I am still working on my steak cooking technique, but the salad was a wonderful reminder of simplicity. I'll be adding lemon, oil and salt to my salads forever now. 

Dessert: Jeni's Ooey Gooey Butter Cake Ice Cream

A bit expensive but worth the hype!
