Cauliflower Shawarma Bowls with Lamb

We started with leftovers and still ate well. Cauliflower shawarma bowls from Craveable by Seema Pankhania, upgraded with added lamb. This is the kind of leftover situation where the second round is honestly better than the first.

Chicken Tostadas

From Cooking the Borderland by Claudette Zepeda, these were crispy, layered, and full of flavor. Tostadas are one of those meals that feel like more effort than they actually are, which is exactly our kind of weeknight win.

Paella with Aioli

We made paella from Best Recipes in the World by Mark Bittman, paired with an aioli from Food & Wine. Paella sounds like a production but when it comes together it’s one of the most satisfying things you can put on the table. Bonus, we brought it with us to Concerts on the Square, so deliciously extra.

Chicken Skewers

From Conscious Carnivore. Simple, protein-forward, and the kind of thing everyone eats without complaint. A solid closer to the week. I pretty much walked in there with no plan, and let the meats decide (lol).
